This salad´s sweet and tangy dressing has delicious flavor but no fat. Try it on other fruit salads, too.

Ingredients

Dressing

cups water

teaspoons cornstarch

cup seedless raspberry jam

cup red wine vinegar

tablespoon sugar

Salad

cups torn mixed greens (such as endive, red leaf and iceberg)

cup finely chopped red onions
4
cups sliced fresh strawberries

(11-oz.) cans mandarin orange segments, well drained

cup sliced almonds, toasted*

Steps

  • 1 In small saucepan, combine water and cornstarch with wire whisk until well mixed. Bring to a boil. Boil 1 minute, stirring constantly. Remove from heat. Add jam, vinegar and sugar; beat until smooth. Refrigerate until serving time.
  • 2 Just before serving, on large serving platter, arrange mixed greens; sprinkle onions over top. Place strawberries and orange segments evenly over onions. Drizzle dressing over salad; sprinkle with almonds.

Expert Tips

* To toast almonds, spread on foil-lined cookie sheet; bake at 375°F. for 4 to 7 minutes or until light golden brown, stirring occasionally. Or place almonds in small nonstick skillet; cook over medium-high heat until light golden brown, stirring frequently.

• If sogginess is a potential problem, pack the dressing separately from salad ingredients, Toss them together at the party just before serving. • Write your name on a strip of masking tape and stick it to the bottom of your containers and dishes for easy identification and retrieval. • Transport items in a large roasting pan with handles or a sturdy shopping bag. • Place a dinner plate on top of a bowl or pie dish to create a sturdy, flat surface for stacking. • Check with the party-giver about bringing serving dishes and utensils.
