Ingredients

Brownies

box (1 lb 3.8 oz) fudge brownie mix
1/2
cup vegetable oil
1/4
cup water
2
eggs

Filling

1/2
cup butter or margarine, softened
1
package (3 oz) cream cheese, softened
2 1/2
cups powdered sugar
3
tablespoons crème de menthe syrup
Green food color, if desired

Frosting

1
bag (6 oz) semisweet chocolate chips (1 cup)
1/3
cup butter or margarine

  • 1 Heat oven to 350°F. Grease bottom only of 13x9-inch pan with shortening. In medium bowl, stir brownie mix, oil, water and eggs with spoon until well blended. Spread in pan.
  • 2 Bake 28 to 30 minutes or until set. DO NOT OVERBAKE. Cool completely.
  • 3 In medium bowl, beat 1/2 cup butter and the cream cheese until light and fluffy. Add remaining filling ingredients; beat until smooth. Spread evenly over cooled brownies.
  • 4 In small saucepan, melt frosting ingredients over low heat, stirring constantly, until smooth. Remove from heat; cool 15 minutes. Pour frosting evenly over filling; spread carefully to cover. Refrigerate 1 hour before cutting. For brownies, cut into 6 rows by 8 rows. Store in refrigerator.

You'll find crème de menthe syrup in the ice cream topping section of your supermarket. Stronger-tasting crème de menthe liqueur can be substituted for the syrup.

These are wonderful brownies. We made our own creme de menthe syrup as I really could not justify $8 for a bottle... Absolute perfect amount of mint, not overwhelming.

I've been making this recipe for probably 20 years. I usually make it for St. Patrick's Day and it is always enjoyed immensely by my co-workers. It's a heavenly taste combination of chocolate, creamy mint filling and smooth chocolate topping.

Amazing taste. Wonderful for a after-dinner mint or simply a little sweet something. Good for the tummy and U keep my 9x13 pan frozen. Lasts for months.
