Very wasteful recipe...they should tell you to ball the left over pie crust and reroll it out until completely used. By doing this you can double the number of mini quiches that you get without having to increase the amount of egg. Doing so I still had egg left over.

Take your left over pie crust and ball it back up then roll it back out...keep doing this until you have no dough left you can double your turnout. You do not have to double your egg mixture at all as there is more then enough. Without doing this you are wasting a lot of dough.

I made this for Christmas. Everyone really liked it. They were easy to make and presented well. You could add spicy sausage, chopped ham or you name it, but just a bit as there isn't much room. Will make again (already have).

A group of us at my church had a high tea for our bible study and Sunday School teachers. We made these and they were wonderful.... and easy. This is a great recipe.
