These mini pizzas are a Christmas Eve tradition that my mom started years ago. We just use Pillsbury biscuits and use tomato paste or pizza sauce, sausage, cheese, mushrooms, olives and pimentos (for color she always said). They are great to do with the kids and now this tradition will continue with them. I will have to try this variation though.

my mother made these when i was younger (i'm 50) before there was a "grand's". she used a small juice glass dipped in water to make an indention in the biscuit and fried hamburger and put i the middle. she used pizza sauce then meat then cheese. they were so good. have to go make some now. i'm hungry.

I tried this recipe. It was easy and fairly good. We weren't real crazy about the Pesto. Next time I'll use pizza sauce.
