Ingredients

Sugar-free yellow cake mix
Chunk Pineapple, packed in fruit juice, drained (keep the juice)
Melted Butter
Brown Sugar Substitute

  • 1 Drain Pineapple, keeping juice for cake
  • 2 Make the cake mix as directed only using pineapple juice as part of the liquid. Add water if pineapple juice is not enough.
  • 3 Melt 2 tbsp of butter in the microwave.
  • 4 Place mini cupcake papers in the pans and fill 2/3's full with cake mix.
  • 5 Place one chunk of pineapple in middle of batter and press down until even with top of batter.
  • 6 Pour 1/2 tsp melted butter on top of pineapple and sprinkle with a little brown sugar.
  • 7 Bake as directed on cake mix for mini cupcakes.

Because of the water content margarine doesn't work as well as real butter.
