Microwave Mexican Olé

Cheer up your guests with this Mexican - style cheesy veggie and beans dip that’s made ready in a microwave in just 15 minutes! Serve with chips.

Ingredients

cup fat-free refried beans (from 16-oz can)

to 6 medium green onions , finley chopped (1/3 cup)

teaspoon chili powder

teaspoon each salt, garlic powder, ground cumin

cup each shredded Cheddar cheese, chopped tomatoes, shredded lettuce

cups baked tortilla chips (about 4.5 oz)
  • 1 In small bowl, mix refried beans, onions, chili powder, salt, garlic powder and cumin. In 9-­inch microwavable pie pan, spread mixture evenly.
  • 2 Microwave on High 1 1/2 to 2 1/2 minutes or until thoroughly heated. Sprinkle with cheese. Microwave on High 1 minute longer or until cheese is melted.
  • 3 Sprinkle tomatoes and lettuce over top. Serve immediately with chips.
