pouch (1lb. 1.5oz.) sugar cookie mix
1/4
cup flour
1/3
cup butter, softened
1
egg
Zest of 2 Meyer lemons
Juice of 1 Meyer lemon
1/3
cup sugar
1
teaspoon cinnamon
1/8
teaspoon nutmeg

  • 1 In a large bowl mix together cookie mix, flour, butter, egg, lemon zest and juice. Chill in refrigerator for 1 hour.
  • 2 Position 3 wire racks at least 6 inches apart in oven and preheat to 375°F. Line 3 cookie sheets with parchment paper.
  • 3 Mix sugar, cinnamon and nutmeg in a small bowl. Scoop dough with a cookie scoop then roll between the palms of your hands to shape 36 (1-inch) smooth balls. Roll each ball in sugar mixture until completely coated. Place 12 balls 2 inches apart on each cookie sheet.
  • 4 Bake for 15 to 18 minutes. Cool 5 minutes on cookie sheets and remove onto wire cookie racks to cool completely. Store covered.
