I made this for a graduation reception and had wonderful results and lots of compliments! I made a lot and made ahead so I wasn't sure how they would turn out. As someone else suggested, I reduced the sour cream and increased the cream cheese. They were really soft right after I made them but firmed up just fine in an hour or so. I wrapped and froze them for 3 days, then let them slowly thaw in the fridge. I cut them when they were slightly frozen and that worked fine. So you can make and freeze them ahead of time. The tortilla gets slightly soggier than when fresh but it works when you had a big party to prepare for. Really delicious!!!

These were yummy, and very festive-lookin'! I'll add chopped jalapenos next time for some extra "oomph!"

I've been making this recipe for a few years now with a slight change. The first time I made it according to the recipe and found (like another reviewer) they were messy and ended up more flat when cut. I eliminated the sour cream and just used cream cheese and taco seasoning mix. This made the rolls more firm and easier to cut after chilled and not messy to eat. Then one time I decided to give it a little more of a spicy kick and added a couple of tablespoons of Mrs. Renfro's green salsa and everyone loves the extra spicy flavor even more now. I've never noticed much of a flavor difference if using the spinach or tomato tortilla's vs. plain tortillas - but the green and red are pretty and give a nice presentation, so I tend to use them.

I picked this recipie because it was very fun and festive, the filling was great but I could not find colored tortillas at my local grocery store, so I foud a pita/tortilla like product called Flatouts that were red, they got very soggy, I wouldnt not recommend using that product, but the original recipie would probably be alot better that mine.

My whole family, especially my vegetarian daughter, loves these. The biggest problem we have is waiting while they set up before eating them.

I have made these several times and there are never any leftovers. Finely chopped avocado makes a nice addition.

This was the best...wow! I did however use regular-Mission brand tortillas. I didn''t want the spinich flavor (tried before I created) to change the flavor of the filling which is WONDERFUL! The fresh cilantro (and I used more than called for because I love the flavor of fresh cilantro) is what really makes this appetizer. Next time I will double this recipe...I brought it in for a Goodbye-luncheon and it was gone in seconds and everyone was begging for more! Also - this was too easy to make and put together...my kind of recipe!

I am surprized these are rated so well. I made these for my family when we were camping on vacation as an appetizer and actually threw them away. Bad after taste. Will never make these again. sorry
