boneless skinless chicken breast halves, cut into thin bite-sized strips

cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn
1
cup Old El Paso® Salsa
1
(2 1/4-oz.) can sliced ripe olives, well drained
8
(8 to 10-inch) fat-free flour tortillas

  • 1 Spray large nonstick skillet with nonstick cooking spray. Heat over medium-high heat until hot. Add chicken; cook and stir 5 to 6 minutes or until no longer pink in center.
  • 2 Stir in corn, salsa and olives. Reduce heat to medium; cook 4 to 6 minutes or until thoroughly heated.
  • 3 Meanwhile, warm tortillas as directed on package. Spoon 1/4 of chicken mixture onto half of each tortilla. Fold tortillas over. If desired, serve with light sour cream and additional salsa.

I did this with pinto beans instead of olives and added some Taco Seasoning because I only had about a 1/2 cup of salsa left. It was pretty good - probably will add more seasoning next time as it was a bit flavorless.

This is my (out of town guest are coming but no arrival time) recipe. It is a winner every time. I serve with sides of shredded Mexican blend cheese and sour cream. Sometimes I add some kind of beans to chicken mixture. There is never any leftovers. It's light enough with the beans for late arrival guest as snack or meal. This was in a Pillsbury cookbook years ago.
