Mexican Beef and Tomato Tortillas

lb. ground beef top round

(15.5-oz.) can pinto beans, drained, rinsed

(10-oz.) can tomatoes with green chiles, undrained

teaspoons chili powder

teaspoon cumin

(6-inch) soft corn tortillas

oz. (3/4 cup) shredded reduced-fat sharp Cheddar cheese
1/2
cup nonfat sour cream, if desired

  • 1 Heat medium nonstick skillet over medium-high heat until hot. Add ground beef; cook 2 to 4 minutes or until browned. Remove beef from skillet; drain on paper towels.
  • 2 Wipe skillet dry with paper towels. Return beef to skillet; stir in beans, tomatoes, chili powder and cumin. Bring to a boil. Reduce heat; cover and simmer 10 minutes.
  • 3 Meanwhile, heat tortillas as directed on package.
  • 4 To serve, sprinkle cheese evenly over tortillas. Top with beef mixture and sour cream; fold in half.
