Excellent. I added carrots and used frozen southwestern corn since I don''t like canned veggies. But, all in all this was a great recipe and it freezes very well (omit topping)

Wow, this was really good. despite the small changes I made due to what I had on hand. I made this with low fat pilsbury grands biscuits, cut them up into 8ths (cos they are HUGE) while the beef was cooking. I used a cast iron skillet, and then a bread pan lined with foil to put some in the freezer since there was only two of us eating. This made ALOT of food, maybe 6 healthy servings with the grands. I sprayed the biscuits with canola cooking spray, since they were lowfat I couldn''t drench them in butter. I also used low fat mexican shredded cheese and regular canned corn (no mexican corn in house!!) I was happy this came out good since it was a last minute meal made up of what I had around the house and picky child ate it and liked it enough to have seconds. I tasted it before deciding the amount of taco seasoning was perfect, any more and it would have been too salty. Keep an eye on the biscuits if y ou use low fat, they dont need the full 22 minutes.

I made this for dinner tonight and my family loved it. I made one addition. I made some packaged taco rice and placed it in a casserole dish and then poured the mexi-beef mixture on top of the rice then the biscuits. This gets a 5 from my family and we will certainly make this one again.
