Even my kids like this new family favorite and they usually so not like corn/tomato together. So good. I seem to have problems getting all the dough to cook so I now put one thin layer of biscut around the skillit and put the rest on a pan to cook and serve on the side.

I was looking for something different for my church potluck so I decided to try this. They licked the dish clean so I made it again the next night for another potluck I was attending! I did make some changes, like 1/2 salsa, 1/2 tomato sauce. I also did 1/2 corn and 1/2 black beans and doubled the cheese (I too used shredded instead). It turned out great. I be using this one again.

Excellent, I make something like this but never tried the biscuits they really added to it. I did add a can of black beans, used salsa instead of tomatoe sauce & the mexican cheese, YUM!

I used my left-over pot roast and veggies to make this and it turned out great! I omitted the corn and corn meal and used shredded taco cheese instead of the cubed cheese and since I had gravy from the pot roast, I used a small can of tomato paste instead of tomato sauce.%0d%0a%0d%0aI cut the pot roast into bite-sized pieces and heated it in a skillet, and then added the taco seasoning and tomato paste. I then added the veggies with gravy and shredded cheese to the skillet until the cheese melted and transferred everthing to a casserole dish. I added the cut biscuits and baked as directed. It was a great way to use the left-overs, and my family loved it too!!

Pretty easy and tastes good! I don't have an oven proof skillet, so I put everything into a casserole dish once prepared.

Didn't expect alot from this recipe so I was totally surprised as to how good it was. Naturally, like most others I did make a few changes. The biscuts were the high point of the dish.

My 7 year old scraped the pan clean! Even my husband who is always skeptical of my "experimentation" said this one was good. He topped his with green onions and sour cream.
