soft cracker breads, halved

(8-oz.) container hummus

cup chopped fresh parsley
1/4
cup sliced ripe olives
1
medium cucumber, thinly sliced
1
tomato, seeded, chopped
2
oz. (1/2 cup) crumbled feta cheese

Directions

  1. 1 Spread each bread half evenly with hummus to within 1/2 inch of edges.
  2. 2 Arrange parsley, olives, cucumber, tomato and cheese over hummus. Roll up each bread half.
