Ingredients

Dressing

3: tablespoons reduced-fat mayonnaise or salad dressing

1/2: teaspoon dried oregano leaves

1/4: teaspoon dry ground mustard

1/4: teaspoon dried basil leaves

1: small clove garlic, minced

Sandwiches

8: slices multigrain bread

1: cup fresh spinach leaves

1: package (6 oz) sliced cooked chicken breast

1/2: medium cucumber, cut into 20 thin slices

4: thin slices red onion

Directions

1 In small bowl, mix dressing ingredients until well blended. Spread about 1 teaspoon dressing on each slice of bread.
2 Top 4 slices of bread evenly with spinach, chicken, cucumber and onion. Cover each with second slice of bread, dressing side down. Wrap each sandwich securely with foil or plastic wrap; take with you for an on-the-go dinner.
