Fresh basil, and annual herb, is the characteristic flavor in pesto and a natural partner for pasta as well as tomatoes and corn. Sweet basil is the type most often found in U.S. markets, though there are a number of different varieties-opal basil, lemon basil and Thai basil, to name a few-each with its own special flavor.
For a simple focaccia-style accompaniment to the chicken, roll out purchased pizza dough and brush with olive oil. Sprinkle on a little salt, pepper and dried herbs (or minced fresh herbs) and bake at 450°F. until browned and cooked through, about 15 minutes. Accompany with a green salad and tiramisù or a fruit tart for dessert.
