INGREDIENTS

 lb beef stew meat
1/2
 cup chopped onion
1
 can (14 oz) artichoke hearts, drained, chopped
1
 jar (4.5 oz) Green Giant® sliced mushrooms, drained
1
 can (14.5 oz) diced tomatoes, undrained
1
 tablespoon balsamic vinegar
1
 tablespoon drained capers
1
 tablespoon dried minced garlic
1
 teaspoon Italian seasoning
1
 teaspoon salt
1
 teaspoon sugar
1 1/2
 cups uncooked penne pasta
1
 tablespoon olive oil
 Fresh ground pepper, if desired
1/2
 cup shredded Parmesan cheese

DIRECTIONS

1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except pasta, oil, pepper and cheese. 2 Cover; cook on Low heat setting 7 to 9 hours. 3 About 15 minutes before serving, make pasta as directed on package. Stir pasta, oil and pepper into beef mixture. Serve with cheese.
Substitute 1 lb ground beef, cooked and drained, for beef stew meat, if desired.
If desired, omit pasta. Serve beef and artichoke mixture over hot cooked brown or white rice or couscous. Garnish with feta cheese crumbles instead of Parmesan cheese.
