lb beef stew meat
1/2
cup chopped onion

can (14 oz) artichoke hearts, drained, chopped

jar (4.5 oz) Green Giant® sliced mushrooms, drained
1
can (14.5 oz) diced tomatoes, undrained
1
tablespoon balsamic vinegar
1
tablespoon drained capers
1
tablespoon dried minced garlic
1
teaspoon Italian seasoning
1
teaspoon salt
1
teaspoon sugar
1 1/2
cups uncooked penne pasta
1
tablespoon olive oil
Fresh ground pepper, if desired
1/2
cup shredded Parmesan cheese

Directions

  • 1 Spray 3 1/2- to 4-quart slow cooker with cooking spray. In cooker, mix all ingredients except pasta, oil, pepper and cheese.
  • 2 Cover; cook on Low heat setting 7 to 9 hours.
  • 3 About 15 minutes before serving, make pasta as directed on package. Stir pasta, oil and pepper into beef mixture. Serve with cheese.

Substitute 1 lb ground beef, cooked and drained, for beef stew meat, if desired.

If desired, omit pasta. Serve beef and artichoke mixture over hot cooked brown or white rice or couscous. Garnish with feta cheese crumbles instead of Parmesan cheese.

Love this recipe! It is easy to start it in the morning. When we are almost ready for dinner we make the pasta and we are done! Everyone in my family loves this and it makes all the same-old slow cooker recipes different.

This has a nice flavor and I like the fact that I can throw it in the crock pot. I probably won't make it often though as the ingredients aren't ones I use alot, so it was expensive for me.

This was super easy to make. I substituted the minced garlic for jarred garlic as well and the flavor was fantastic. Even my picky boys loved this and said it was a "keeper".

Absolutely delicious! This is going into my book to make again and again. The flavors blend together so perfectly in the crockpot and smells delicious. I had to substitute jarred minced garlic for the dried (only used 1/2 tbsp) and it was still so good. Next time, I will serve this with a loaf of crusty French bread. Thanks for a keeper!
