cup uncooked regular long-grain white rice
1
can (10 3/4 oz) condensed cream of celery soup

cups water
1 1/2
cups ready-to-eat baby-cut carrots, cut in half lengthwise
1
box (12 oz) frozen cooked Italian-style meatballs, thawed
Chopped fresh parsley, if desired

  • 1 In 12-inch nonstick skillet, mix rice, soup and water. Heat to boiling; reduce heat to medium-low. Cover; cook 5 minutes.
  • 2 Stir carrots and meatballs into rice mixture. Cover; cook 10 to 15 minutes, stirring occasionally to prevent sticking, until rice and carrots are tender and meatballs are hot. Sprinkle with parsley.

Out of baby carrots? Just cut regular carrots into pieces that are about 2 inches long and 1/4 inch wide.

Great recipe! It was incredibly easy and fast! I doubled this recipe and was really glad I did! I did add green onions and melted some mozzarella cheese into it. DELICIOUS!! Definite keeper!!

Great recipe...I made my own meatballs and cooked them in beef broth and olive oil. I used a steamfresh bag of white rice with mixed veggies. Sprinkled some cheese on top for my daughter and she loved it.

I was pressed for time the other night and needed a quick recipe. I used cream of chicken soup(all I had on hand) thawed a bag of brocolli, cauliflower, carrot mix. it was very good. everyone gave it a thumbs up and my two year old granddaughter loved it. she even had seconds! will definitely make this again. would like to try it with asparagus next time.

My husband and I loved this! I did however add a couple handfuls of fresh baby spinach that I cut into strips. Also I used Cream of Mushroom Soup as I do not like cream of celery. This dish is wonderful and I will definately be making it alot! I love it because you can add things to the recipe you have on hand or can substitute ingredients very easily.

We made this with reduced fat cream of mushroom soup and it was tasty. Next time I may add some onion though for a little more zip. Nice easy comfort food that can be made quickly--what's not to like?!
