This Meatball Sub Bubble-Up Bake is a traditional meatball sub in hot and golden biscuit-topped casserole form. All the flavors are there–juicy meatballs, lots of cheese, warm crusty bread, and we’ve even amped it up with some peppers and onions. With frozen meatballs and veg, pre-shredded cheese, and of course, fluffy Pillsbury™ Grands!™ biscuits, dinner doesn’t get much easier.

Recipe Ingredients

Take a look at the ingredients you’ll need to make this Meatball Sub Bubble-Up Bake.

Italian-Style Beef Meatballs: You’ll need 3 cups of fully cooked, frozen bite-sized meatballs. They come in a larger bag, so measure out what you need and reserve the rest for later.

Frozen Pepper and Onion Mix: Frozen peppers and onions are a great time-saver. If you’d like to substitute fresh, use 1/2 cup sliced onion and 1/2 cup sliced bell pepper.  

Muir Glen Organic Classic Marinara Sauce: You’ll want to use a flavorful, good quality sauce like Muir Glen. Substitute an equal amount of your favorite marinara if you prefer.

Mozzarella: Pre-shredded low-moisture mozzarella cheese is easy and gives that classic stretchy-cheese vibe. If you want to shred your own, make sure to use low-moisture mozzarella.

How to Make Meatball Sub Bubble-Up Bake

Here’s how to make a delicious Meatball Sub Bubble-Up Bake. Follow the recipe for more detail!

1. Heat the Meatballs, Vegetables and Sauce

Add the frozen meatballs and veggies to the casserole dish, and pour in half of the marinara. Toss to coat, and bake for 20 minutes.

2. Prep the Biscuits

Pop open the can and separate the biscuits. Cut biscuits into 6 pieces each.

3. Mix the Casserole

Add the rest of the marinara, biscuit pieces, and half the cheese to the casserole. Mix gently until everything is coated in sauce. Add the remaining cheese on top.

4. Bake and Serve

Bake the casserole until golden and bubbly; serve hot.

Refrigerator Storage

Refrigerate any leftovers covered tightly in the baking dish, or place individual portions in an airtight, food-safe storage container for 3 to 4 days.

Freezer Storage

Slice the leftover baked casserole into individual portions, and place in separate resealable freezer plastic bags or airtight, food-safe storage containers.

Reheating

  • From Fridge: To reheat refrigerated leftovers, put the covered casserole in a 350°F oven for 20 to 30 minutes or until the middle of the casserole reaches at least 165°F (use a food thermometer).
  • From Frozen: Let thaw in the refrigerator overnight, then reheat in the oven as above. Alternatively, heat in the microwave on medium-high (70%) power for 2 to 3 minutes or until the internal temperature reaches at least 165°F (use a food thermometer).

    Heat oven to 350°F.

    In an ungreased 13x9-inch ceramic or glass baking dish, mix the frozen meatballs, onion and pepper mix, and half of the marinara sauce (about 1 1/2 cups). Bake for 20 minutes.

    While the meatballs and vegetables cook, open the can of biscuit dough and separate into 8 biscuits. Cut each biscuit into 6 pieces.

    Remove baking dish from the oven. Add remaining marinara sauce and 1 cup of cheese; gently mix to combine. Scatter biscuit pieces over the top, and gently mix until everything is well dispersed. Top with remaining 1 cup of cheese.

    Bake 25 to 30 minutes or until biscuits are a deep golden brown and baked through, and the meatballs register at least 165°F in the center. Serve hot, sprinkling with chopped parsley if desired.
