fresh whole baby portabella or regular white mushrooms, sliced

cup fresh spinach leaves, stems removed

  • 1 In 16-oz mason jar, layer ingredients in order listed. Cover with lid. Refrigerate until ready to eat, up to 4 days.

Shake salad prior to eating so all ingredients mix together.

Substitute mixed spring greens for the spinach.

I haven't tried yet, but LOVE the idea of it. My husband and I own a little country store with a deli and I think this would be a great way to make a quick grab and go lunch for our customers. I'm from the south and a great lover of mason jars. Thanks for the idea! :-)

what a great way to keep your salads- ready when needed!!! just pop in your lunch tote and go!.

great idea for lunch or dinner! could even do this with fruit. we all need a quick easy way to get our fruits & veggies every day!
