Marinated Mozzarella Eyes

cup extra-virgin olive oil

tablespoons Italian seasoning

clove garlic, finely chopped

package (8 oz) bocconcini (small fresh mozzarella cheese balls), drained
1/3
cup sliced pimiento-stuffed green olives

Directions

  1. 1 In medium bowl, mix olive oil, Italian seasoning and garlic. Add cheese balls; toss to coat. Cover and refrigerate at least 4 hours or overnight to marinate, turning occasionally.
  2. 2 Remove cheese mixture from refrigerator. Using slotted spoon, place cheese balls on serving platter. Top each cheese ball with olive slice, cut side up, for eye.
