Marinated Garden Tortellini Salad

package (9 oz) refrigerated cheese-filled tortellini

cups small fresh broccoli florets

cup halved cherry tomatoes

medium green onions, sliced (1/4 cup)

medium cucumber, quartered lengthwise, cut into 1/4-inch slices
1/2
cup Italian dressing
1
tablespoon salad supreme seasoning, if desired

Directions

  • 1 Cook tortellini as directed on package, adding broccoli during last 2 minutes of cooking time. Drain; rinse with cold water to cool. Drain well.
  • 2 Meanwhile, in large bowl, mix remaining ingredients. Add tortellini and broccoli; toss gently to coat. Serve immediately, or cover and refrigerate until serving.

Salad supreme seasoning is a blend of herbs, salt and pepper. Look for it in the spice section of your grocery store.

This marinated pasta salad can be made with any variety of vegetables. Try thinly sliced carrots, sliced zucchini or cooked green beans. Sliced green or ripe olives are also a nice addition.

Made this for a ladies meeting in Jan. It did not go well. I think because it was cold outside. Would be better in warm weather. Used yellow and green squash instead of the cucumber, and a quarter of sweet onion. Also used Hunt's canned diced tomatoes well drained. It tasted so good, but I brought a lot home. Will try again in the summer.

This is so easy. I have made it twice this summer and it is a BIG hit! It does keep for a few days so if you do not finish it all that same day..it will be ready for the next time. I will definitely make it again.
