Ingredients

SALAD

ripe mangoes (about 2 1/2 lb.), peeled, cut into cubes and seeded (about 3 1/2 cups)

lb. shelled deveined cooked large shrimp

DRESSING

1/2
cup fat-free mayonnaise or salad dressing
1/4
cup skim milk

teaspoons chopped fresh mint leaves

teaspoon sugar

teaspoon fresh lemon juice
Dash coarse ground black pepper

GARNISH

Lettuce leaves

small green or red bell pepper, cut into 1 1/2x1/4-inch strips

Directions

  1. 1 Place mango cubes in serving bowl; add shrimp.
  2. 2 In small bowl, combine all dressing ingredients; mix well. If necessary, season to taste by adding additional lemon juice or pepper. Pour dressing over salad; stir gently to mix.
  3. 3 Arrange lettuce on large platter. Spoon salad onto lettuce. Sprinkle bell pepper strips over salad.
