Enjoy this refreshing fruit slush featuring mangoes, passion fruit and citrus - a cool beverage with a tropical twist.

Ingredients

ripe mangoes, peeled, seed removed and flesh cut up

(11.5-oz.) cans frozen passion fruit-flavored juice cocktail concentrate, thawed

cups water

cups light rum

cups lemon-lime flavored carbonated beverage, chilled

Steps

  • 1 Place mango flesh in food processor bowl with metal blade. Add juice cocktail concentrate; process until smooth. Pour into 2-quart nonmetal freezer container. Stir in water and rum. Cover; freeze 6 to 8 hours or until icy, stirring twice.
  • 2 To serve, spoon 1/2 cup frozen mixture into each glass. Add 1/2 cup carbonated beverage to each glass; stir gently.

The homely passion fruit, grown in the tropics, is about the size of a golf ball, with wrinkly purple-black skin. Inside, however, the orange flesh has a bright, sweet, amazing flavor that adds life to many kinds of beverages.

Purchase mangoes that yield gently to the touch, but are not too soft.

Passion fruit is a small egg-shaped fruit with a dry, crinkly purple exterior and yellow-gold interior filled with edible black seeds. The fruit has a tropical perfume and a sweet-tart flavor.

Rum is distilled from fermented sugar cane juice or molasses. It’s a popular spirit in the Caribbean, where most rum is made.
