The mango and chicken combination really takes this salad in a new direction. Although the portions are rather hefty, this recipe could easily be for 6 or 8 if smaller tortilla shells are used. The cilantro/onion/jalapeno combination can also be easily replaced with fresh salsa, if you like tomatoes. I do, so I switched it out and it was still really good, plus I had some leftover salsa for chips and salsa!

This was last night's dinner for myself, my husband and my 14 year old son. It was a big hit with all three of us. There is enough sweetness to appeal to the younger set, while the other flavors add spiciness and complexity for the other two of us. I plan to make this again when I want to impress company.

My wife made this for a boy scout camping trip this weekend. Instead of the tortilla bowl she baked the tortillas and made them into chips and served the dish as an appetizer. The boys devoured the whole thing in minutes, need I say more?!

This was nice, light meal. My husband said he would ask for it, to be made again. It was a nice change to a chicken salad. So far, I have only rated four recipes, so I don't know if I am going to vote for this one. Good luck in the Cook Off.

This recipe is fantastic! The flavor of the ingredients work great together and the tortilla bowl is delicious and looks wonderful. The recipe was very easy to follow and the kids even loved it. It's a winner!%0d%0aSteven
