Mandarin Orange Cake with Pineapple Icing

Ingredients

Pillsbury Butter Recipe Yellow Cake Mix

eggs
1/2
cup vegetable oil or 1/2 cup apple sauce
1
can Mandarin Oranges, undrained. (I usually get the larger can, but the smaller one works too)

package Jello instant cheesecake mix, original style
8
oz sour cream or greek yogurt
9
oz whipped topping, thawed
20
oz can crushed pineapple, undrained
Optional: replace 2 oz of the fruit juice with rum or brandy.

  • 1 Preheat oven to 350 degrees. Recipe will make 3 round 9 in cakes, 1 11 x 17 sheet cake, or 2 dozen cupcakes. Be sure to grease & flour the cake pans, use a bit of the dry cake batter instead of flour to avoid the yucky flour coating. Use paper liners for cupcakes.
  • 2 Beat cake batter, eggs, oil, and mandarin oranges until smooth. Will be a bit lumpy due to the oranges, but make sure all the cake mix is blended.
  • 3 If making 3 9 inch rounds, will cook for approximately 30 mins. Large sheet cake will cook for approximately 45-55 mins. Cupcakes will cook for approximately 20 to 25 mins. Insert a toothpick or cake tester into the center of the cake, if it comes out clean, then it's ready.
  • 4 Icing: Fold whipped topping, sour cream, pineapple, and the cheesecake package in a very large bowl. Save the graham crackers for another recipe. Icing will be light and VERY fluffy. I use a large popcorn bowl. Store in refrigerator until cake is cooled completely.
  • 5 Ice cake and enjoy! There will be LOTS of icing and cake is very rich, cut small pieces.

If making cupcakes, fill the cups to just half. If making a 3 layer cake, use toothpicks in the cakes to hold the layers in place, they will slide due to the fluffy icing. Add fresh fruit, coconut, or even chocolate for garnish.
