Mamaw's Lemon Curd Tarts

My grandmother always made lemon meringue pie every holiday! This recipe is so much easier than that - but tastes as good! The "hardest" part is pre-baking the dough!

Ingredients

1 - Pillsbury® Refrigerated Pie Crust (at least 1 crust) 14.1 oz box

jars, lemon curd (your choice of brand!)
1
container whipped topping
1
egg
2
tablespoons sugar

  • 1 Preheat oven to 350. Roll out refrigerated pie crust. Cut circles to fit in cupcake or tart pan.
  • 2 Mix egg and sugar into 1/4 cup water until dissolved. Brush onto pie dough. Bake dough until lightly browned.
