Tips for cooking fish or seafood:

  • Use the freshest fish and seafood possible.  Fresh fish should not smell fishy.
  • Thaw fish and seafood in the refrigerator or under cold running water (not at room temperature).
  • When grilling fish fillets, use a fish basket to keep flesh from breaking apart. 
  • Another approach is to grill fish on a "plank" of cedar or other fragrant wood (made for this purpose), which imparts flavor. Soak the wood plank in water for several hours prior to placing it on the grill.
  • Grill small seafood, such as shrimp or scalllops, in a grill basket to avoid losing small pieces between the rack slats.
  • Avoid cross-contamination of work surfaces and utensils by not using them for other foods(vegetables, for example) until they are thoroughly washed with soap and hot water.
  • Wash hands thoroughly before and after handling fish or seafood.
