Tips & Tricks

From scrambled eggs to dyed Easter eggs, we would be hard-pressed to do without eggs. They add binding power to batters and provide protein and other nutrients to food dishes.

Egg tips:

  • Keep eggs refrigerated, not at room temperature.
  • Raw eggs stay fresh for 3 to 4 weeks in the refrigerator.
  • Refrigerate leftovers.  Eat cooked egg dishes within two days. Eat hard-boiled eggs within a week.
  • Don't use eggs that are cracked or broken in the carton.
  • Use leftover dyed hard-boiled eggs in egg-salad sandwiches, sliced egg lasagna, Caesar salad, and so on.
  • Egg shells can absorb smells from other foods, so refrigerate raw eggs in their original carton, away from strong food odors.
