Macadamia Toffee Brittle

Ingredients

cup sugar
1/2
cup light corn syrup
1/2
teaspoon kosher (coarse) salt

cups coarsely chopped macadamia nuts

tablespoon butter, cut into small pieces

teaspoon baking soda
1
teaspoon vanilla

cup toffee bits
3/4
cup milk chocolate chips
  • 1 Spray 15x10x1-inch pan with cooking spray. In 2-quart microwavable bowl, stir together sugar, corn syrup and salt. Microwave uncovered on High 4 minutes or until bubbling. Stir in macadamia nuts and butter. Microwave on High 3 to 5 minutes or until golden brown.
  • 2 Stir in baking soda and vanilla (mixture will bubble). Immediately pour into pan, spreading to 1/4-inch thickness with lightly greased spatula. Sprinkle toffee bits and chocolate chips over top. Let stand 10 minutes or until chips are melted. With spatula, spread melted chocolate evenly over brittle. Cool completely. Refrigerate 20 minutes to set chocolate. Break into 1 1/2- to 2-inch pieces.
