Ingredients

(2-inch) new red potatoes

head Boston lettuce, torn (about 4 cups)

cups loosely packed torn prewashed fresh spinach
1/2
medium red onion, halved, thinly sliced (1/2 cup)

(6-oz.) cans water-packed white tuna, drained, flaked
1/3
cup sliced celery
1
(2 1/4-oz.) can sliced ripe olives, drained
1/4
teaspoon coarse ground black pepper
3/4
cup purchased fat-free Thousand Island salad dressing

Directions

  1. 1 Scrub potatoes; pierce with fork. Arrange on paper towel in microwave. Microwave on HIGH for 3 to 5 minutes or until very tender when pierced with fork. Cool under cold running water. Halve potatoes and slice. Set aside.
  2. 2 In large bowl, combine lettuce, spinach and onion; toss gently. Arrange on 4 individual plates. Top with potato slices, tuna, celery and olives. Sprinkle each with pepper. Serve with salad dressing.
