Ingredients

3: tablespoons butter or margarine

1: small onion, finely chopped (1/4 cup)

3: tablespoons all-purpose flour

1: tablespoon chopped fresh parsley

1/2: teaspoon salt

1/8: teaspoon pepper

2: cups milk

1: cup Progresso® chicken broth (from 32-oz carton)

1 1/4: cups chopped fresh or frozen (thawed) lobster (about 12 oz)

Directions

1 Melt butter in 3-quart saucepan over low heat. Cook onion in butter, stirring occasionally, until tender. Stir in flour, parsley, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat.
2 Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in lobster. Heat to boiling; reduce heat. Simmer about 3 minutes, stirring frequently, until lobster is white.

If your family has a favorite fish other than the lobster, use it instead. Halibut, orange roughy or haddock make a good substitute. Make this bisque extra special by decorating the top with green onion wisps and a carrot slice cut into a decorative shape.
