Ingredients

Dressing

tablespoons grated Parmesan cheese

tablespoons olive oil

tablespoons lemon juice

tablespoons water

tablespoon reduced-fat sour cream

teaspoon Worcestershire sauce

teaspoon Dijon mustard

teaspoon anchovy paste or 1/4 teaspoon salt

teaspoon pepper

garlic cloves, minced

Salad

boneless skinless chicken breast halves, pounded slightly to flatten

teaspoon salt-free garlic herb blend
10
cups torn romaine lettuce
1
tomato, cut into 8 wedges

Directions

  1. 1 GRILL DIRECTIONS: Heat grill. In medium bowl, combine all dressing ingredients; mix well. Set aside.
  2. 2 When ready to grill, lightly sprinkle both sides of each chicken breast half with herb blend. Place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 8 to 10 minutes or until chicken is fork-tender and juices run clear, turning once.
  3. 3 Meanwhile, in large bowl, combine lettuce and dressing; toss to coat. Divide salad evenly onto 4 plates.
  4. 4 Slice each chicken breast half crosswise into slices; do not separate slices. Fan chicken slices; arrange 1 breast half on lettuce mixture on each plate. Top each salad with 2 tomato wedges.
