Light Asian Cabbage-Chicken Salad

Ingredients

Dressing

Salad

cups finely shredded cabbage

cups cubed cooked chicken breast

green onion, thinly sliced

(3-oz.) pkg. chicken or oriental-flavor ramen noodle soup mix

tablespoons sliced or chopped almonds, toasted

teaspoons sesame seed, toasted

  • 1 In small bowl, combine all dressing ingredients; mix well.
  • 2 In large bowl, combine cabbage, chicken and onion; toss to mix. Crumble ramen noodles; discard seasoning packet or reserve for a later use. Add noodles, almonds and sesame seed to cabbage mixture. Add dressing; toss to coat.

Very tasty and easy on the budget considering that cabbage is inexpensive. Nice, crunchy salad!

This salad is way overrated! First of all, the 6 cups of cabbage it calls for is way to much for the servings it suggested. The dressing isn't near enough for all the cabbage either. The salad tastes nice, but it is really dry. It needs some mandarin oranges to help make it less dry. I would never make this recipe again. I am going to try and just force myself to eat it, and pretend that it is not hay!

My wife makes a similar recipe only using Napa Cabbage. If you are not at the front of the line in a large group, there is NOTHING left. It is ALWAYS a super hit. One hint, don't combine the liquid onto the cabbage until ready to serve. It doesn't get soggy and keeps the crisp, sharp flavor of the vinegar. Even kids like this one!

I have prepared this recipe for several years since finding it in cookbook near the checkout stand. It is very easy and very good. It has been a hit with my husband (yes even the he-man type like it), friends and co-workers at our staff potlucks. Its easy to bring the ingredients to work and prepare onsite.
