boneless, skinless chicken breast halves, cut into thin strips

cup thinly sliced carrots
1/3
cup diagonally sliced green onions

stalks bok choy including leaves, sliced diagonally into 1/2-inch pieces*

teaspoon ginger

cups water

(10 1/2-oz.) cans condensed chicken broth
2
oz. uncooked angel hair pasta, broken into fourths (1/2 cup)

tablespoons lemon juice

  • 1 Heat oil in Dutch oven or large saucepan over medium-high heat until hot. Add chicken; cook and stir 4 to 5 minutes or until chicken is no longer pink.
  • 2 Add carrots, green onions, bok choy, ginger, water and broth. Bring to a boil. Reduce heat to low; cover and simmer 5 minutes. Add pasta; cover and simmer 3 to 4 minutes or until pasta is tender. Stir in lemon juice.

* Two cups torn fresh spinach can be substituted for the bok choy.

Pairing lemon and chicken soup has a precedent in the Greek soup classic, avgolemono (ahv-goh-LEH-mon-noh).

Angel hair pasta, capelli d'angelo, are very thin, quick-cooking strands.

For variety, substitute chopped spinach for the bok choy.

Serve the soup with crusty rolls or breadsticks for a light, satisfying meal.
