Lemon Thyme Chicken

Ingredients

  • 2 tablespoons olive oil or vegetable oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme leaves
  • 2 garlic cloves, minced
  • 4 boneless skinless chicken breast halves

    GRILL DIRECTIONS: In small bowl or jar with tight-fitting lid, combine oil, lemon juice, thyme and garlic; blend well. Place chicken in shallow baking dish. Pour oil mixture over chicken; turn to coat. Cover; refrigerate 30 minutes to marinate.

    Meanwhile, heat grill. When ready to grill, remove chicken from marinade; discard marinade. Place chicken on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 14 to 18 minutes or until chicken is fork-tender and juices run clear, turning once.

  • To broil, place food on broiler pan and broil 4 to 6 inches from heat using times provided above as a guide.
  • One tablespoon of chopped fresh tarragon or one teaspoon of dried tarragon leves is a wonderful substitute for the thyme in this recipe. Or, if lemon thyme is available, use that in place of the regular thyme. It has a light lemony fragrance and taste that will complement this dish.
  • Garnish your serving platter with fresh lemon wedges and a sprig of fresh thyme.
