Salad

(16-oz.) pkg. uncooked bow tie pasta (farfalle)

cups cubed cooked chicken

cups green or red grapes

cups cubed cantaloupe

cups thinly sliced celery

cup sliced green onions

Dressing

(8-oz.) containers low-fat lemon yogurt

cup reduced-calorie mayonnaise or salad dressing

to 2 tablespoons chopped fresh mint

tablespoon grated lemon peel

teaspoons salt

teaspoon pepper

Garnish

cup slivered almonds, toasted*

Directions

  1. 1 Cook pasta to desired doneness as directed on package. Drain; rinse with cold water. In very large bowl, combine all salad ingredients; mix well.
  2. 2 In medium bowl, combine all dressing ingredients; blend well. Add dressing to salad; mix well. Cover; refrigerate 3 hours to blend flavors. Just before serving, sprinkle with almonds.
