Lemon-Cranberry Bars

Ingredients

(18-oz.) pkg. Pillsbury™ Refrigerated Sugar Cookies

cup sugar

teaspoon cornstarch

tablespoons grated lemon peel

tablespoons fresh lemon juice

tablespoons butter

sweetened dried cranberries

Directions

  1. 1 Heat oven to 350°F. Break up cookie dough into ungreased 8-inch square pan. Press dough in bottom of pan to form crust.
  2. 2 Bake at 350°F. for 12 to 17 minutes or until edges are golden brown.
  3. 3 Meanwhile, in medium bowl, combine egg yolk and egg; beat well. Set aside.
  4. 4 In medium saucepan, combine sugar, cornstarch, lemon peel, lemon juice and butter. Bring to a boil, stirring frequently until butter is melted. Remove from heat. Gradually add mixture to eggs, beating constantly with wire whisk. Return mixture to saucepan. Cook over medium-low heat until mixture thickens, stirring constantly.
  5. 5 Remove crust from oven. Pour lemon mixture over partially baked crust; spread to within 1/4 inch of edges.
  6. 6 Return to oven; bake an additional 10 minutes. Cool 1 hour or until completely cooled. Cut into bars. Garnish each bar with 2 cranberries.
