cups shredded romaine lettuce

can (15 oz) Green Giant® garbanzo beans, drained, rinsed

medium yellow bell pepper, chopped (1 cup)
1/2
cup chopped red onion
2
cups broccoli coleslaw blend (from 16-oz bag)

medium plum (Roma) tomatoes, chopped (1 1/2 cups)
1/4
cup finely chopped fresh parsley
1/2
cup mayonnaise or salad dressing
1/2
cup ranch dressing
1 1/2
cups Parmesan-flavored croutons

  • 1 In 3-quart clear bowl, layer all ingredients except mayonnaise, dressing and croutons in order listed. In small bowl, mix mayonnaise and dressing; spread over top. Cover; refrigerate until serving.
  • 2 Just before serving, sprinkle with croutons. If desired, toss to mix.

To reduce the fat a bit, use reduced-fat mayonnaise and ranch dressing instead of the regular types.

You can cut the romaine yourself, or for convenience, look for packages of ready-to-eat romaine in the produce department.

Ha, ha. I'm trying to post a review with no luck, because for some reason it thinks some of my words are innappropriate. I have no idea what it's referring to. I'll try again, using simple words: Good recipe. Everyone really liked it. Had it at a Christmas party and people all had seconds. Keeper.

Wonderful salad! I used Ken's low fat Ranch with Hellman's with olive oil for the dressing. Also, it taste better the 2nd day -- the broccoli slaw is much more flavorful!

It was yummy. I prepared it last evening, using the suggestion of the author by using low-fat mayonnaise and salad dressing.

OMG! The fat in this! How about choosing 1/2 NON FAT Mayo and 1/2 NON FAT Sour Cream and combining it with dry salad dressing in the packet - with maybe a splash of Non Fat Milk to blend? And those on diets may want to have a little less of the beans - although they are high in protein, the more you pile on, the more calories. Maybe choose a sprinkle of sliced almonds rather than the croutons (which probably have a lot of oil or ?).
