cup ranch dressing

teaspoon Old El Paso® 40% less sodium taco seasoning mix

cups shredded lettuce

can (15 oz) red kidney beans, drained, rinsed

cups shredded deli rotisserie chicken (without skin)

cup coarsely crushed hint-of-lime white corn tortilla chips (from 13 1/2-oz package)

cup shredded Mexican-style taco cheese (4 oz)

cup grape or cherry tomatoes, halved

  • 1 In small bowl, mix dressing and taco seasoning mix.
  • 2 On large serving platter or individual serving plates, layer remaining ingredients except tomatoes. Drizzle with dressing. Sprinkle with tomatoes.

If you don't like ranch dressing, try adding medium salsa to it (50/50). It's delish.

Made this for a fellowship gathering at the parsonage. Used one can of chile with beans instead of the chicken. (Just because I didn't have any chicken available.) And omitted the kidney beans. It was cool and refreshing; and everyone who ate it, said how much they liked it.
