Layered Lettuce Salad

Compliment your meal with this fresh and heaping side dish. Serve this layered bacon, lettuce and veggies salad packed with cheese – a delicious refrigerated meal.

cups torn iceberg lettuce

cups coarsely chopped fresh cauliflower

cup thinly sliced carrots

cup sliced fresh mushrooms

cup chopped sweet red onion

cups light mayonnaise

tablespoons milk

tablespoon prepared mustard

oz. (1 cup) shredded Cheddar cheese
  • 1 Cook bacon in large skillet until crisp. Drain on paper towels. Crumble bacon; set aside.
  • 2 In 13x9-inch (3-quart) glass baking dish, layer lettuce, cauliflower, carrots, mushrooms and onion.
  • 3 In small bowl, combine mayonnaise, milk and mustard; blend well. Spread evenly over onion layer. Layer cheese and bacon over mayonnaise mixture. Cover; refrigerate at least 8 hours or overnight.
