lb ground Italian sausage

cups tomato pasta sauce

cup ricotta cheese

can (16.3 oz) Pillsbury® Grands!® refrigerated buttermilk biscuits

cup shredded mozzarella cheese (4 oz)

Directions

  • 1 Heat oven to 350°F. Cook and drain pasta as directed on package. Meanwhile, in skillet, cook Italian sausage until no longer pink; drain. Stir in pasta sauce, ricotta cheese and pasta; cook 1 minute.
  • 2 Separate dough into 8 biscuits; press each biscuit to 5 1/2-inch round. Firmly press 1 biscuit in bottom and up side of each of 8 ungreased jumbo muffin cups, forming 1/4-inch rim. Fill with sausage mixture; sprinkle with mozzarella cheese.
  • 3 Bake 28 to 32 minutes or until golden brown. Cool 1 minute; remove from pan.

I really enjoyed these! I don't have jumbo muffin tins, so I used normal sized and reformed all the biscuits and ended up making twelve! Fed myself and my husband, and a twelve year old boy! Definitely making this again! We used low-fat cottage cheese instead of ricotta.

Made this tonight and was quite pleased with it. I did add substantially more basil based seasoning, and used 6 oz. by weight of pasta. It was a definite hit! A bit tricky to get the biscuit in the cup without a huge air pocket underneath, otherwise it was easy and oh so yummy! I used sweet italian sausage and next time will use spicy, more basil, and perhaps some additional anise.

Wonderful for snacks, lunch, or two for dinner. If you want to, there are all kinds of ways to lower the fat and calories. Get a grip there Tinney. Have some lettuce and a carrot.

This recipes sounds good!! I can't wait to do this with my kids.... My kids are very active and I have them sport as well so their metabolism is very good so I'm not worried about them having a little pasta once in whille pasta.:)
