These Jalapeño Cheddar Waffle Melts are the perfect easy dinner for any night of the week! With gooey cheddar cheese, mildly spicy jalapeño, and your favorite taco toppings, these melts are a fun and family-friendly meal that even kiddos can enjoy. Plus, the simple ingredients and easy instructions make this showstopping meal as fun to make as it is to eat! 

Recipe Ingredients

This recipe comes together with approachable pantry staples that are often used for taco night!

Pillsbury™ Flaky Layers Buttermilk Biscuits: These biscuits not only provide top-notch flavor, but they’re also so simple to use. They create a stress-free and mess-free dough for the base of your waffles.

Cheddar Cheese: Cheddar cheese is frequently paired with jalapeño because it’s gooey and creamy with a subtle flavor that complements the spice perfectly! Shredded cheese will get you a more consistent flavor throughout each waffle than other cheese styles.

Pickled Sliced Jalapeño Chiles: Canned jalapeños come pre-sliced, so the work is done for you! No stray seeds or spicy fingers required.

Other Ingredients You’ll Need: Chili powder flavors the waffle and adds a little extra heat. Chunky-style salsa, sour cream, and green onions make wonderful fresh toppings for after the waffle has been cooked and turn this dish into a gourmet meal!

How to Make Jalapeño Cheddar Waffle Melts

This recipe is simple to make! These are the basic instructions; when you’re ready to start, please see the full recipe below.

1. Preheat the Waffle Maker

It’s important to preheat your waffle maker for even cooking. Waffle makers without a nonstick coating should be sprayed with cooking spray before the biscuit is added to avoid sticking and burning.

2. Prepare the Dough

Separate the dough into 10 biscuits. Press or roll each biscuit to form a 5-inch round. Sprinkle chili powder evenly over biscuits.

3. Put the Dough in the Waffle Maker

Place 1 biscuit, chili powder side up, in the waffle maker. Sprinkle 1 rounded tablespoon of cheese evenly over the biscuit in the waffle maker and top with 4 to 5 jalapeño slices. Sprinkle another 1 rounded tablespoon of cheese evenly over jalapeños. This creates layers of flavor and even distribution. Top with another biscuit round, chili powder side down.

4. Bake the Waffle

Close the lid of the waffle maker and bake for about 2 minutes or until golden brown. Carefully remove the waffle. Repeat with remaining biscuits, cheese, and jalapeño slices.

5. Top and Serve

Top the waffles with salsa, sour cream, and green onions to your taste. Serve and enjoy!

Leftover Jalapeño Cheddar Waffle Melts make a great lunch or snack the next day! Be sure to store leftovers within 2 hours of finishing preparation.

Refrigerator Storage

Store in an airtight container for up to 3 days.

Reheating

  • Microwave: Heat leftovers in 30-second increments in the microwave until hot. Do not add toppings until after the waffle is heated through.
  • Toaster Oven or Regular Oven: Bake at 350°F for 5 to 10 minutes or until heated through. Do not add toppings until after the waffle is done reheating.
