Absolutely my favorite recipe of the moment. I have made it for brunch, lunch, and as a thank you gift for parties at friends' homes. Love it! The last time I made this recipe I added red peppers and it made the presentation even more attractive and the taste was delicious.

I don't even really like zucchini but I LOVE this recipe! It comes out great everytime, and it's a real crowd-pleaser. I actually grated 1 1/2 medium zucchini last time I made it (instead of cutting them into medallions) and prepared it the same way - it tastes amazing, and no huge chunks of zucchini, which might be easier to feed to picky eaters. Also, I don't like yellow mustard, so I use Dijon instead and it tastes great.

This was AMAZING! Me and my cousin made this on friday, because we could not eat meat, for it is the season of lent. This is truly a fantastic meal, I don't feel cheated that I could not eat meat! :) To save time though it helps to buy pre-cut onions.

This is an amazing recipe and as a cooking teacher for over thirty years I highly recommend it. Originally it had a entire stick of butter, so I am glad to see that this revised recipe is lower in fat. I have served this to countless guests for more than twenty years. Enjoy!

Easy Pease! I would def make this again good for B,L,, D. I used reduced fat everything too, pillsbury cresents, cheese and egg beaters still came out great. I was worried when there was only two eggs in the recipe but, don't be fooled it comes out perfect. The cresent rolls for crust umm, delicious! Next I will try variations off this w/ different veggies. Thank you pillsbury!

This was very good...I made it exactly like the recipe and it turned out perfectly. My family doesn't even like zucchini normally but they really liked this recipe. I will definitely make again.
