One of my favorites! I use half zucchini and half summer squash, and also add some chopped cooked ham to make a more hearty meal. FanTAStic!!

I have been making this for years and everyone always loves it. I, however, shred the zucchini instead of slice. I believe my recipe had shred. I think it's probably a lot better that way.

Just wonderful! Have been making it for years... I use a sweet and hot mustartd in place of the yellow mustard and used colby jack cheese...Comes out GREAT every time!

This is far and away my favorite quiche recipe. I used Pillsbury pie crust instead of crescent rolls, and it turned out great. It's even better warmed up the second day. It was quick and easy and I've made it multiple times, using different cheeses, but I think the italian cheese mix is my favorite in conjunction with the italian seasonings.

Before tweaking this recipe, take note of your pan size. Based on the reviews on here, I added extra eggs. However, I erred because I didn't notice that I used 9" pie pan (the recipe calls for 10"). It was too much egg. I will try this again using the correct proportions. It seemed like a potentially good recipe. I sprinkled parmesan cheese on top, and I think next time I will omit it, so that it looks more like the photo .

Thought about adding more to it, more eggs, I did go heavy on the Muenster cheese, and i used 2 tubes of cresent rolls, since I was unable to make the crust with one, I used fresh herbs and zucchini from my garden. I was worried my carnivore boyfriend wouldn't like it because it lacked meat, but he LOVED it,he at 1/3 of it! My son also ate more than I expected for a 3 year old. He loves veggies and cheese. Great recipe! I look forward to making this sinple tasty recipe again!

Delicious! Did without the crust and added 2 more eggs and more cheese. Sprinkled flavored bread crumbs and parmesan cheese on the top before baking. Wow, great!

I have been making this Zucchini Pie sence the 1980's. It is a favorite. Had to look up the recipe because I have been making it by memory for 20+ years. Wanted it to be perfect. Made it for my boss's 35th anniversary luncheon. Thank you Millicent for your creativity. YUMMMMMMM!
