We just finished eating it. We loved the combination of the Italian seasoning , cheese, and garlic. Sweet Potatoes are our favorite veggies so it makes it perfect when we have leftovers. This recipe will definitely become part of the recipe file.

I made this recipe for my family and they loved it so much they asked for it again this week. I love the combination of sweet potatoes and pork. The parmesan topping made the tenderloin extremely flavorful.

Combine all the ingredients from the 'Vegetables' section in a one gallon bag (like Ziplock). Leave some air in the bag and shake until all the vegatables are covered. We usually make the vegetables in advance (up to 24 hours) and put in the fridge until we are ready to cook. Heat the oven, pour the veggies, add the tenderloin. I don't know anyone who can peal and cut sweet potatoes in 15 minutes. This cuts the in kitchen time to nothing.

Delicious and I am not a big fan of sweet potatoes! Easy to prepare and easy to love. The meld of flavors from this dinner is wonderful.
