Italian Pasta Salad with Tomato Mayonnaise

Ingredients

Salad

oz. (1 1/2 cups) uncooked bow tie pasta (farfalle)

medium Italian plum tomatoes, coarsely chopped

medium red bell pepper, coarsely chopped
1
medium green bell pepper, coarsely chopped
1/3
cup chopped sweet onion
1 1/2
oz. (1/3 cup) pepperoni slices
1/4
cup chopped fresh parsley
1/4
cup chopped seeded pepperoncini chiles
1
(2 1/4-oz.) can sliced ripe olives

Tomato Mayonnaise

1/2
cup marinara or spaghetti sauce
3
tablespoons light mayonnaise or salad dressing
2
tablespoons purchased light Italian salad dressing
1/4
teaspoon salt

Directions

  • 1 Cook pasta to desired doneness as directed on package. Drain; rinse with cold water to cool.
  • 2 In large bowl, combine cooked pasta and all remaining salad ingredients; mix well.
  • 3 In small bowl, combine all tomato mayonnaise ingredients; blend with wire whisk until well blended. Pour mayonnaise over salad; stir gently to coat. If desired, garnish with additional parsley.

I like pasta very much. i tried this and it is truly delicious. I am pleased to have a new dish with salad.

I found this recipe and had to try it. It is simply delicious and so easy to make! Of course I am not a fan of olives so I left those out. I also was wary of the sauce but it is some of the best sauce I have ever tasted! I have to agree that it would be great on subs, etc.

I came across this recipe and knew that I had to try it right away. I didn't have fresh tomatoes so I used 1/2 a can of italian style tomatoes and it turned out perfectly. I was wary of the pasta sauce/dressing at first but WOW. Would be excellent for game day with subs. A must try.

Truly a gourmet "deli salad" recipe. This has become a family favorite. I''m asked to bring it to every gathering. I usually triple it but still end up bringing home an empty bowl. Thanks for great tasting, easy to prepare recipe Pillsbury!

Really truly delicious- -this is good enough to be deli pasta salad. I''m so pleased to have a new dish to bring to all the summer BBQs and parties! My 2yo and 4yo both ate this with gusto.
