Ingredients

Basil Vinaigrette

cup olive or vegetable oil

cup red wine vinegar

tablespoons chopped fresh or 2 teaspoons dried basil leaves

Salad

cups chopped romaine lettuce

cup chopped fresh basil leaves

cup cut-up cooked chicken

large tomatoes, chopped (2 cups)

medium cucumbers, chopped (1 1/2 cups)

package (3 oz) Italian salami, chopped

can (15 to 16 oz) cannellini beans, rinsed and drained

Directions

  1. 1 In tightly covered container, shake all vinaigrette ingredients.
  2. 2 In large bowl, place all salad ingredients. Pour vinaigrette over salad; toss until coated. Serve immediately.
