Ingredients

(8-oz.) pkg. 1/3-less-fat cream cheese (Neufchâtel), softened

oz. (1 cup) shredded mozzarella cheese
1/3
cup sliced green onions
1/2
teaspoon dried Italian seasoning
1/2
teaspoon crushed red pepper flakes

(2-oz.) jar sliced pimientos, drained
1/2
cup chopped fresh parsley

Directions

  1. 1 In large bowl, combine all ingredients except pimientos and parsley; blend well.* Stir in pimientos. Cover; refrigerate 30 minutes for easier handling.
  2. 2 Shape mixture into 2 balls; roll each in parsley. Serve immediately, or wrap each ball in plastic wrap and refrigerate until serving time. Serve with low-fat crackers or crisp breadsticks.
