cups purchased coleslaw blend (from 16-oz. pkg.)

cups mashed potato flakes

lb. sliced cooked corned beef, chopped (about 2 cups)

oz. (1/2 cup) shredded Cheddar cheese

  • 1 Melt margarine in large nonstick skillet over medium heat. Add coleslaw blend and onion; cook 5 to 7 minutes or until crisp-tender, stirring occasionally.
  • 2 Add water, milk and salt. Bring to a boil. Remove from heat; stir in potato flakes until moistened. Add corned beef and cheese; mix well. Spread evenly in skillet.
  • 3 Return skillet to medium heat; cover and cook 8 to 10 minutes or until thoroughly heated and golden brown on bottom. If desired, invert onto serving plate; sprinkle with additional cheese.

I used red potatoes instead of potato flakes. Just boiled and mashed them in with milk, butter, and McCormick's Garlic Bread Sprinkle. I also used Buddig's Corned Beef. This was so easy and delicious! I served this as a side with the Grand's Corned Beef Biscuit Sandwiches for St. Patrick's Day! My family loved it! Very easy and yummy to make!

I made this last year for my husband and my dad and they both loved it! So much that I made it 2 times the next month for my dad, when my mom was away. And I plan on making it again for them both for St.Patty's day!
