Heat oven to 375°F. Using holiday-shaped cookie cutters, cut 2 shapes from each cheese slice. Cover; refrigerate. Chop remaining cheese scraps; set aside.
In large bowl, toss apples, granulated sugar, cinnamon and lemon juice to coat apple slices. In medium bowl, mix flour, oats and brown sugar. Using pastry blender or fork, cut in butter until mixture is consistency of coarse crumbs. Spoon apple mixture into each of 6 ungreased 6-ounce custard cups. Top with chopped cheese; sprinkle with crumb mixture. Place cups in 15x10x1-inch pan.
Bake 18 to 25 minutes or until apples are tender and topping is golden brown. Top each with cheese cutout; bake 1 to 2 minutes longer or until cheese begins to melt.
